Need some easy RV breakfast recipes? Here are a few things that are easy to make and will have your taste buds jumping for joy. 

Keep in mind these recipes assume you have an oven. Toaster ovens work too, you’ll just need to use small pans!

RV Breakfast Recipe #1: Pancake Muffins 

Just like it sounds, these are muffins made with pancake batter. It’s a great RV breakfast because you can do it with essentially just 2 ingredients - pancake mix and water! Make the batter according to the box’s directions and preheat the oven (or toaster oven) to 375 degrees. Bake for 20-25 minutes and you’re all set! 

 For additional flavor, try putting chocolate chips, blueberries or some maple syrup in the batter before baking. It’s also less messy and easier to eat than adding them after the muffins are done. 

 Breakfast #2: Egg “Muffins” 

 Egg muffins make a great RV breakfast for someone following a keto or low carb diet. Packed with protein and healthy fats, it’s a great way to keep hunger at bay so you can focus on enjoying your morning. 

First, start by cutting up some green and red peppers. Cook them on a skillet for a few minutes to help release some of the flavors. At the same time, cook up some of your favorite breakfast meat such as sausage or bacon. Once everything is done, throw everything into a mixing bowl with the eggs. Stir it up and stick it in the oven at 350 degrees for about 30-35 minutes. 

Feel free to experiment with different combinations of things in your egg muffins. And remember that cheese + eggs are always a great combo!

Breakfast #3: Apple Sandwiches 

This recipe is popular with kids, as it combines some of their favorite foods - peanut butter, raisins and apples. 

Core and slice an apple into 4 or 6 round pieces. These will be the “bun” of the sandwich that hold everything in. Then spread peanut butter on one half and put a few raisins in there. Add a second slice of apple as the top, and you’re all done. You can spruce these up by adding other things too - toasted oats, honey, cinnamon, or bananas are great options. 

 RV Breakfast #4: Very Berry Smoothie

 Smoothies taste great, provide important vitamins and minerals and are easy to make. You don’t even need an oven or stove for this one, so it’s great for the summer when you don’t want the RV to get hot from cooking. 

You can try any combination of berries, but we recommend frozen blackberries, raspberries and strawberries. Greek yogurt and bananas can help thicken up the smoothie, and some almond milk will help your blender process everything more easily. For some extra protein, consider adding some vanilla whey protein.

Recipe #5: Breakfast Burrito 

You can’t go wrong with a breakfast burrito. Just scramble some eggs and cheese on the stove, put them in a tortilla and add a little salsa. You can add some breakfast meat if you want, but it takes time to cook and really isn’t necessary. 

One great thing about this RV breakfast is you can freeze them! Cook several at a time, wrap the extras in freezer bags and throw them in the freezer. You can easily heat them up in the microwave over the next few days for an easy breakfast.
