Sometimes you just want a quick and easy RV dinner. You’ve had a long day - whether it was exploring something new or just relaxing - and want something for dinner that just won’t take too much energy.
Here are a few options to consider that don’t require a specific cooking appliance like a pressure cooker:
Quick and Easy Dinner #1: Hamburgers and Salad
This meal covers all of your bases:
It’s not complicated
It’s relatively healthy
There aren’t many ingredients
It doesn’t take a lot of time
Essentially you just have a few steps:
Preheat the grill, burner griddle (or cook-top if that’s how you’re cooking the burgers)
While it’s heating up, prepare the meat for the burgers
Start preparing the toppings for the burgers - cheese, lettuce, tomato, etc.
Put the meat on the grill and cook to your desired doneness
Finish prep for the toppings
Take the cooked burgers off the grill
Make your salad. You can also choose to just eat a bagged salad - there are great options out there these days
Top your burger and salad and dig in
Not too bad, right?
Quick RV Dinner #2: Pilaf + Veggies + Meat in a Pan
Meal helpers are great. While they’re helpers and not actual meals all by themselves, they provide a good foundation for you to add a few things and create a good dinner for your family. One treat we’ve enjoyed over the last few years starts with a box of rice pilaf.
- First, cook the pilaf by sauteing it in butter. Once it’s turned brown, it’s time to throw in the rest of the ingredients.
- You’ll usually start by adding some water and some spices that came with the pilaf mix.
- Next, we like to add some mixed frozen vegetables. Green peas and carrots work well, but feel free to experiment with other things. This helps get some fiber, vitamins, and minerals into the meal to make it more well-rounded.
- Finally, add some kind of cooked meat to the mix. We’ll usually use hot dogs, but this is another area where you can experiment.
- Stir everything up to help the flavors blend together. Cook your stew according to the directions on the pilaf box, then enjoy.
Easy RV Dinner #3: Tacos or Nachos
Everyone loves tacos, right? You can choose to use the same ingredients and make nachos instead - whatever floats your boat.
Even though there are more necessary ingredients, they’re still easy to prepare. The main things you need to do are:
Cook the meat (beef, chicken, steak, etc.)
Prepare the toppings - lettuce, tomato, cheese, cilantro, etc.
Set everything out on the table so people can make their own
Enjoy
Usually, these can be completely prepared in about 15 or 20 minutes. The key is to be preparing your toppings, setting the table, etc. while the meat is cooking.
If you choose to make nachos, you don’t have to bake the cheese onto the chips if you don’t want to. Nachos taste great just by spreading out your chips on a plate and topping with your favorites.
